  • Simple syrup: You can buy simple syrup at most liquor stores, or you can make your own by combining equal parts sugar and water in a saucepan and heating until the sugar dissolves.Allow it to cool before using it in co*cktails.

It is usually done using amuddler, but you can also use a handle of a wooden spoon.   • 2-4 leaves fresh mint
  • ¾ ounce simple syrup
  • 1 ½ ounces gin
  • ¾ ounce lime juice
  • Soda water to top
  • Fresh mint and/or lime slices for garnish (optional)

Instructions

  • Add the mint leaves and simple syrup to a co*cktail glass.Gently muddle the mint with the syrup.

  • Add ice, gin, and lime juice to the glass.

  • Top with soda water and gently stir, moving the spoon up and down to evenly distribute the ingredients.

Notes

To serve 8:

  • 15-25 mint leaves
  • ¾ cup simple syrup
  • 1 ½ cups gin
  • ¾ cup lime juice
  • Soda water to top (about 2 cups)
  • Fresh mint and lime slices for garnish

Instructions for a batch:

  1. In a large pitcher, muddle the mint leaves with the simple syrup.
  2. Add gin, lime juice, and soda water to the pitcher and stir gently.
  3. Chill and then serve over ice. (Avoid adding ice directly to the pitcher so as not to dilute the drink.)

**If making ahead, leave out soda water until just prior to serving. Also, remove mint leaves from the pitcher after muddling and add back fresh leaves right before serving. (Leaving the mint in the pitcher for several hours may turn the co*cktail bitter.) You can make up to 1 day in advance.
